Wayne Elias of Los Angeles’s Rockwell Table & Stage is in the kitchen cooking sesame crusted salmon with white and green asparagus. He says now is the best time to make this dish since white asparagus is in season until June. If you can’t find fresh salmon, frozen salmon works just as well.

She adds an extra tip that if you have extra-batter from the eggplant, you can always dip it in hot oil to make delicious hot fritters.
