Porchetta with Roasted Potatoes and Salsa Verde

Chef Bruce Kalman of Square Peg Pizza is making a delicious Italian dish of porchetta with roasted potatoes and homemade salsa verde. If you have never tied a roast together, you can either have your butcher teach you, or just practice. Make sure you dry out the pork skin by placing it, uncovered, in a refrigerator for 24 hours. Finally, let the cooked pork rest for 20 minutes before serving.
