Catfish Po’ Boys with Avocado Remoulade

Author of “Southern Girl Meets Vegetarian Boy,” chef Damaris Phillips is in the kitchen cooking a southern favorite, catfish po’ boys. She even makes a vegetarian version of the delicious sandwich, substituting the catfish in for raw cashews and navy beans. You can also save calories by using Greek yogurt instead of mayonnaise on the sandwich, as well.
