Charred Leek and Potato Soup
Host of “Food Truck Nation,” Brad Miller is in the kitchen making a hearty dish of charred leek and potato soup with homemade garlic croutons. He recommends adding both charred and uncooked leeks when preparing in order to add a variety of flavor. To save time, he pre-boils the potatoes before adding them to the soup. With this recipe, he uses yukon gold potatoes, but says you can really use any type.
