Spring Lamb Two Ways
Executive chef of Sanctuary Camelback Resort, Beau MacMillan is in the kitchen today making spring lamb two different ways. He starts with a braised lamb shoulder and then also makes a roasted rack of lamb. He then pairs the lamb with an eggplant puree and mint chimichurri. He explains that domestic rack of lamb is the best kind to use because it is lean and less gamey. Remember to let the lamb rest before serving to maximize its flavor.
