Birthday Cake Waffle
Ingredients
- Waffle or Pancake mix of your choice
- Spray oil
- Sprinkles
- Frosting of your choice (canned or buttercream)
Preparation
- Prepare waffle mix according to package directions, which usually call for eggs and oil or butter.
- Heat waffle iron and spray it with non-stick baking spray.
- Pour waffle batter on waffle iron and cook according to directions, until waffle is brown.
- Remove and put one triangle of the waffle on plate, covering it with frosting, and then another triangle of waffle.
- Add sprinkles as desired.
- Add a candle and serve!

Parmesan Peppercorn Roast Beef Panini
Ingredients
- ¼ cup mayonnaise
- ¼ cup creamy Caesar dressing, prepared
- 1 tablespoon grated Parmesan cheese
- 4 focaccia bread, sliced for sandwiches
- 16 ounces (deli-style) sliced roast beef
- 8 slices Swiss cheese
- 2 cups grilled red, orange and green bell peppers and onions
- Melted butter, as needed
Preparation
- To prepare peppercorn parmesan mayonnaise: combine mayonnaise, Caesar dressing and parmesan cheese in bowl and whisk to blend. Reserve.
- Layer roast beef, sliced cheese and grilled peppers and onions and peppercorn parmesan mayonnaise evenly on bottom halves of focaccia bread.
- Close with top slices of bread.
- Brush outer surfaces of sandwiches with melted butter.
- Grill press in panini grill set on medium-high heat until bread is golden brown and cheese is melted.

Sea Salt and Lime Grilled Fish Tacos
Ingredients
- 1 pound (1-inch thick) red snapper fish fillets (or halibut, mahi mahi or other firm and meaty white fish variety)
- ¼ cup lime juice
- ¼ cup chopped fresh cilantro
- ¼ cup canola oil
- ¼ cup prepared salsa verde
- ¼ cup reduced-fat mayonnaise
- 1 teaspoon sea salt, divided
- 2 cups shredded coleslaw blend
- 16 avocado slices (about 2 small avocados)
- 8 corn tortillas
- 2 limes, cut in half
Preparation
- Preheat grill to medium-high heat.
- Combine lime juice, cilantro, oil and red snapper in large zip top bag; marinate in refrigerator for 20 minutes.
- For creamy salsa verde, combine salsa and mayonnaise in mini food processor or blender. Puree until smooth.
- Remove fish from marinade, season with ½ teaspoon sea salt, and place on hot grill.
- Grill fish for 6 minutes on each side and remove. Let rest several minutes then flake fish with fork.
- Place lime halves on grill, flesh side down, along with tortillas for 1 minute or until limes are grill marked and one side of tortillas are toasted.
- Remove and bend tortillas, toasted side out, into taco-shape.
- Fill each tortilla with ¼ cup slaw and 2 slices avocado.
- Divide fish evenly among tacos and drizzle each with 1 tablespoon sauce. Sprinkle with remaining sea salt and serve with grilled lime half.

Chocolate Valentine Cups with Crème Fraiche
Ingredients
FOR THE CRÈME FRAICHE
- 2 cups heavy cream
- 3 tablespoons buttermilk, cultured
FOR THE CHOCOLATE HEARTS
- 1-pound mint chocolate disks or any bittersweet chocolate, chopped
- 2 cups whipped cream
- ½ cup crème fraiche
- 1-pound fresh berries (raspberries, blackberries, strawberries, or blueberries)
Preparation
- To make crème fraiche: combine cream and buttermilk, cover loosely with breathable material and let sit overnight. Refrigerate until ready to use.
- Melt chocolate.
- Spray bottom and sides of molds with cooking spray.
- Coat bottoms and sides of the molds with the melted chocolate.
- Place second mold over the top, be sure to spray with cooking spray as well.
- Refrigerate and let harden, about 30 minutes.
- Remove from molds.
- Store until ready to fill.
- Just before serving whisk whipped cream and crème fraiche together.
- Pipe or spoon the mixture into the hearts and top with berries.

Chicken a la Rose`
Ingredients
- 6 chicken breasts, boneless, skinless
- 2 tablespoons butter, divided
- 2 tablespoons olive oil, divided
- 4 cloves garlic, minced
- ¼ cup almonds, sliced
- 2 tablespoons lemon juice
- 2 roses, petals, chemical free
- 4 tablespoons honey
- Salt and pepper to taste
Preparation
- Sauté salt and peppered chicken breasts in a large skillet with 1 tablespoon butter and 1 tablespoon olive oil over medium heat, about 5 minutes per side.
- Remove to a serving platter and keep warm.
- In the same skillet, sauté garlic in remaining butter and olive oil for about a minute.
- Add almonds continue another 2 minutes.
- Turn off heat or remove from stove top and stir in lemon juice to deglaze the pan and scrape up any brown bits.
- Crush the rose petals to release aroma and natural oils, then gently stir in pan with honey and season with salt and pepper.

Citrus, Pear and Pomegranate Salad with Vanilla Syrup
Ingredients
- 3 navel oranges
- 2 red grapefruit
- 1 pear, sliced into thin wedges
- 1 small pomegranate, de-seeded, about a cup
- juice of 2 lemons
- ⅓ cup sugar
- 1 vanilla bean, split lengthwise, seeds scraped out
Preparation
- Trim the tops and bottoms of the oranges and grapefruits, then cut away the peel and pith with a paring knife. Slice the pear into thin wedges, removing the core.
- Combine lemon juice, sugar and ¼ cup water with the vanilla seeds in a small saucepan over medium heat. Stir until sugar is melted.
- Remove from heat and let cool to room temperature.
- Artfully arrange the fruits on a large serving platter and pour the syrup over the fruit.
- Cover and refrigerate at least 2 hours or overnight.

Roasted Sweet Potato Bisque
Ingredients
- 4 sweet potatoes
- 1 tablespoon olive oil
- 4 tablespoons butter
- ¼ cup minced shallots
- 2 tablespoons flour
- 4 cups chicken broth
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 cup half and half
- ¼ cup crème fraiche
- ½ cup candied pecan pieces
Preparation
- Preheat oven to 350°F.
- Slice sweet potatoes in half lengthwise; drizzle cut surfaces lightly with olive oil. Place cut side down on a baking sheet and roast uncovered for 1 hour or until tender and fully cooked.
- Cool. Scoop tender sweet potato out of skins and rough chop; reserve.
- Melt butter in a heavy soup pot over medium heat; add shallots and saute for 2 minutes or until tender. Add flour and stir over medium-low heat for 2 minutes.
- Slowly add chicken broth and whisk until smooth. Add reserved sweet potatoes, brown sugar, cinnamon nutmeg and salt.
- Simmer over low heat 10 minutes or until completely heated through.

Crostini with Ricotta Herb Cheese and Tri Color Radishes
Ingredients
- ½ cup ricotta cheese
- 6 ounces goat cheese, softened
- 1 tablespoon fresh chives, minced
- 1 teaspoon fresh dill, minced
- 1 teaspoon fresh parsley, minced
- ½ teaspoon fresh garlic, minced
- ½ teaspoon fresh lemon zest
- 1 French baguette, diagonal-sliced into ½ inch slices
- Extra virgin olive oil, as needed
- ½ teaspoon garlic and pepper seasoning blend
- 1-2 bunches radishes, sliced thinly
- Fresh cracked black pepper and sea salt, to taste
Preparation
- Preheat oven to 400°F.
- Combine ricotta cheese, goat cheese, fresh herbs, garlic and lemon zest in bowl and mix thoroughly. Reserve.
- Brush both sides of sliced baguette lightly with olive oil and arrange in a single layer on a sheet pan. Season lightly with garlic and pepper seasoning.
- Bake for 15 minutes, or until lightly toasted.
- Spread ricotta herb cheese blend evenly over each crostini.
- Arrange 3 radish slices on top of each crostini; drizzle olive oil lightly over radishes, season lightly with a grind of black pepper and sea salt.
- Arrange crostini on serving platter. Garnish with fresh herbs, if desired.

Tequila Grilled Shrimp and Mango Skewers
Ingredients
- 36 jumbo shrimp
- 2 ripe mangoes, each sliced into 12 pieces
- ½ of a jalapeño, minced
- ½ cup tequila
- ½ cup fresh lime juice
- ½ cup dark brown sugar
- 2 tablespoons fresh ginger, finely grated
- 1 ½ teaspoons cornstarch
- Oil for grilling
- Skewers, pre-soaked in water
Preparation
- Preheat grill to high heat.
- To make the glaze, combine minced jalapeño, tequila, lime juice, brown sugar, and ginger in a small saucepan. Set over heat and cook until boiling and slightly thickened.
- In a small bowl, combine cornstarch with 1 tablespoon water. Pour mixture into glaze while stirring. Bring back up to a boil and take off heat. Divide into two bowls then set aside.
- On each skewer, put three shrimp and two mango slices, alternating.
- Brush hot grill with oil so prevent shrimp from sticking.
- Season shrimp and mango with salt and brush with glaze. Grill on both sides until shrimp are pink and fully cooked. Brush again with remaining glaze and serve.

Oven Roasted Salmon with Grapefruit Salsa
Ingredients
- 2 tablespoons Pink Grapefruit Marmalade
- 2 tablespoons green onions, chopped
- 2 tablespoons red and orange bell pepper, fresh, diced
- 1 tablespoon green jalapeños, seeded, minced
- 1 teaspoon flat leaf parsley, minced
- ½ cup red grapefruit, refrigerated, drained, ¼-inch dice
- 1 center cut skin-on salmon fillet (about 2 pounds)
- Olive oil
- Kosher salt
- Black pepper, coarse-ground
Preparation
- Preheat oven to 475°F.
- Combine pink grapefruit marmalade, green onions, bell pepper, jalapeño and flat leaf parsley in a small bowl and stir until fully blended.
- Add diced grapefruit and gently stir to blend. Keep cold.
- While preparing salmon, preheat a baking sheet in hot oven.
- Using a sharp knife, cut fillet into 4 equal pieces; pat dry with paper towels to remove excess moisture. Rub fillets lightly on all sides with olive oil and season with kosher salt and black pepper.
- Remove preheated baking sheet from oven; carefully arrange fillets, skin side down, on baking sheet and return to oven.
- Immediately reduce oven temperature to 275°F.
- Oven roast salmon for 10 to 12 minutes or until the fish is cooked to desired doneness.
- To serve, top each fillet with grapefruit salsa.
