New Orleans Shrimp Étouffée
Chef John Besh is in the kitchen cooking up this delicious traditional New Orleans dish. Before diving in, he explains that he discovered his passion for cooking at an early age. When he was nine, his father was paralyzed after being struck by a drunk driver. Following the incident, John started helping out a lot with cooking for the family. He would later help some of those left homeless from Hurricane Katrina, describing food as a way of healing people. Aside from cooking, John has also started a foundation that preserves the culture and community of New Orleans, including scholarships for kids and micro-loans to local farms.
