Dan Kohler breaks down the main schools of BBQ: North Carolina, South Carolina and Memphis. He explains that North Carolina sauces are known for their vinegar base, while Southern Carolina sauces is a mixture of mustard, vinegar, brown sugar and chilis. Not to be forgotten, Memphis sauces are thick, dark, tomato based, sweet and tangy. Kevin Budso sits in on the taste tests and is ready to spread them on a pulled pork sandwich.
