Rich Cocoa Fudge Recipe and Christmas in Notting Hill

HERSHEY'S Special Dark Cocoa gives this recipe a rich and luxurious flavor perfect for a Saturday night premiere! Serve up a batch for friends and family, and get creative with making extra to share with neighbors or a holiday bake sale.

Famous soccer star, Graham Savoy has always been too busy for love, but when he comes home to Notting Hill for Christmas, he changes his mind after meeting Georgia, a visiting American and the one person who has no idea who he is. Starring Sarah Ramos and William Moseley.

INGREDIENTS:

3 cups sugar
2/3 cup HERSHEY'S Cocoa or HERSHEY’S SPECIAL DARK Cocoa
1/8 tsp salt
1 1/2 cups milk
1/4 cup butter (1/2 stick)
1 tsp vanilla extract

DIRECTIONS:

1. Line 8-or 9-inch square pan with foil, extending foil over edges of pan. Butter foil.

2. Mix sugar, cocoa and salt in heavy 4-quart saucepan; stir in milk. Cook over medium heat, stirring constantly, until mixture comes to full rolling boil. Boil, without stirring, until mixture reaches 234°F on candy thermometer or until small amount of mixture dropped into very cold water, forms a soft ball which flattens when removed from water. (Bulb of candy thermometer should not rest on bottom of saucepan).

3. Remove from heat. Add butter and vanilla. Do not stir. Cool at room temperature to 110°F (lukewarm). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss (about 7 minutes). Quickly spread in prepared pan; cool completely. Cut into squares. Store in tightly covered container at room temperature.

1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "Perfectly Chocolate" Chocolate Frosting.

Variations:

One Pan Cake: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.

Three Layer Cake: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.

Bundt Cake: Grease and flour 12-cup fluted tube pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.

Cupcakes: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost.

1. Heat oven to 375°F. Remove wrappers from chocolates.

2. Beat shortening and peanut butter in a large bowl until well blended. Add 1/3 cup of granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.

3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.

1. Bake pie shell; cool. Stir together sugar, cornstarch and salt in a 2 quart saucepan. Combine egg yolks and milk in a container with a pouring spout. Gradually blend milk mixture into sugar mixture.

2. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir for 1 minute. Remove from heat; stir in butter and vanilla.
