#1: BREAKFAST- PORTABLE SCRAMBLED EGGS
Scrambled eggs are a great way to start your day, but it’s not a meal that works if you’re on the go and trying to stuff them in a tortilla…well, it’s still messy. So if you want to be able to make eggs at home and eat them on your way somewhere, why not try the waffle-maker version?
In a pitcher, whisk together 2 or 3 eggs with a dash of milk, stir in any other ingredients (diced onions and peppers, mushrooms, shredded cheese or minced herbs). Then pour the mixture onto a waffle iron (pre-heated to medium high heat) and cook for about 2 minutes and voila!
#2: LUNCH- LEFTOVER PIZZA POCKETS
Okay, leftover pizza. Instead of eating it cold, I discovered a way to turn it into a completely new meal using a waffle iron! First, you want to fold the bottom corner of the slice up to the crust on the opposite side. Then just trim the edge and place the folded pizza into a pre-heated waffle iron. In general, 2 folded slices fit together well in one waffle iron. Close the lid and press down on the pizza. You know it’s finished once the cheese that oozed out becomes crispy and dark and the crust in the center is crisp.
#3: DINNER: WAFFLEBURGER
You can ditch the grill and stove if you have a waffle iron! Just season some ground beef with salt and pepper and form it into a very thin patty. Then you place it in the waffle iron and cook it for about 4 minutes. When your patty is done cooking, remove it from the waffle iron. But if you like cheese, put some on top and place the patty back in the waffle iron for no more than 5 seconds!
