Executive chef at Amada, Jose Garces, is in the kitchen putting together some delicious Spanish tapas plates like pork albondigas and bacon-wrapped dates. He tells you that smoked paprika will give your dishes a rich smoky flavor. He also advises you to coat your hands in olive oil when rolling meatballs. His favorite meats to use for these tapas are ground pork, lamb or beef.
