Gnocchi with Spring Vegetables
Chef and creator of “Homemade Delish,” Roberta Pipito is making a delicious spring dish of gnocchi with homemade pesto and vegetables. She emphasizes that you should not be intimidated by gnocchi and you can even get your family involved in helping. You can also make gnocchi with pumpkin, ricotta, spinach and herbs. When it comes to the vegetables, she uses asparagus and sugar snap peas to bring a nice spring flavor to the dish.
