Loaded Chicken Enchiladas - Home & Family

Loaded Chicken Enchiladas

Chef Serena Wolf is making a delicious and filling recipe, loaded chicken enchiladas out of her cookbook, “The Dude Diet.” She points out that if you are short on time, you can always buy a rotisserie chicken at the market and shred it at home. She adds a little extra heat to the dish by adding dried and smoked jalapeños. Be very gentle with the peppers, because they are spicy. If you want to make this dish vegetarian, replace the chicken with portobello mushrooms, sliced zucchini and more beans.
