The Science of Mayo
Dan Kohler is in the kitchen talking about mayonnaise, which is a form of emulsion. He explains that emulsions are made from two liquids that do not normally mix, like oil and water. He later shows you how easy it is to make your mayonnaise and Spanish aioli at home.
