Ingredients
- 1 cup unbleached all-purpose flour
- 1/3 cup sugar
- Pinch of salt
- 1/2 cup unsalted butter
- 1 cup water
- 4 eggs
- 2 teaspoons fresh orange zest
- Oil for frying
- Cinnamon sugar topping
- 1 cup sugar
- 2 tablespoons cinnamon
- 2 heaping teaspoons fresh orange zest
Directions
1. Melt the butter in a pan over medium heat with the water
2. Add in the sugar and stir to cook until completely dissolved over medium/high heat
3. Bring to a slight boil then reduce to low heat
4. Add in the pinch of salt
5. Pour in flour and use a spatula or wooden spoon to stir, it will look clumpy, but continue to stir until it forms a cohesive ball of smooth dough, this takes the raw flour taste out as well
6. Place in the bowl of a stand mixer and allow to cool slightly for a couple of minutes
7. Stirring slightly can also help to cool the dough a bit
8. With the mixer running, add in the eggs one at a ti me making sure it completely mixes before adding in the next egg
9. Stir in the orange zest
10. This will create a smooth and scoopable batter
11. Bring the oil to 375 degrees in a deep fryer or dutch oven with a candy thermometer
12. Scoop the dough with a 1 tablespoon size cookie scoop into the oil
13. Scoop in about 6 at a time
14. Fry until golden brown and cooked through; these will puff up a lot!
15. Use the spider tool to move them around and to remove them from the oil
16. Place on a cooling rack lined with paper towel
17. Mix together the ingredients for the cinnamon sugar
18. Sprinkle the freshly fried donuts with the sugar or toss the donuts in the sugar; this will
depend on how sweet you like your donuts
19. Serve hot!
