Stuffed Peppers
Debbie Matenopoulos is making a family-favorite recipe with ground pork and an egg.

  • 1 large onion
  • 1 lb. ground pork
  • ½ c rice, rinsed
  • 1 ½ t salt
  • ½ t pepper
  • 1 can (35 oz.) whole tomatoes
  • 1 egg
  • 5-6 red and yellow peppers

Directions

1. Clean the peppers and cut off tops.
2. Put pork into mixing bowl.
3. Chop onion and then brown in tsp. of oil. When cool add to pork.
4. Next, add the egg, rice and seasonings to the pork. Mix well.
5. Fill the peppers with the meat mixture.
6. Place filled peppers in pot and cover with tomatoes.
7. Simmer for 2 hours.
8. Serve with sour cream.
