Sophie's "Gorgeous for Good Live-It" Meal Plan

Ingredients for Morning Smoothie:

  • 6-8 ounces almond milk
  • 1/2 banana
  • 1/2 cup frozen organic blueberries
  • 1 heaping tbsp ground flax
  • 1/2 tsp ground cinnamon
  • 1/2 cup raw walnuts
  • Probiotic: either 2 caps broken and added, or 1 pot of Bio-K
  • A handful of fresh spinach (optional)

Lunch ingredients for Almond Cauli Tuna:

  • 1 handful Almonds
  • 1 handful Cauliflower (a little more than ¼ cup)
  • ¼ cup Onion, chopped
  • ¼ cup Celery, chopped
  • ⅛ tsp Garlic Powder
  • ¼ tsp Dijon Mustard
  • 1 - 2 tsp Vegenaise
  • 1 tsp Nori Sheet Flakes
  • ¼ tsp Dill (optional)

Ingredients for The Gorgeous For Good Dinner bowl:

  • 1 ½ cup cooked quinoa
  • 3/4 cup Adzuki/Black beans (canned is fine)
  • 3/4 cup butternut squash, cubed and roasted
  • 1 cup Swiss chard or kale steamed and chopped
  • A handful of toasted raw almonds (about 5-8)
  • A handful of hemp seeds
  • 1/2 cup soaked sea veggies (optional) We can use any here Shanti, except Hiziki.

Ingredients for Dressing: Spicy Tahini dressing - blend together

  • 1/2 cup coconut milk
  • 1/2 cup raw sesame tahini
  • 1/4 cup water
  • 1/4 cup almond butter
  • 3 tablespoons fresh lemon juice
  • 1 jalapeño pepper, seeded
  • 4 to 5 cloves garlic
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper

Directions for almond cauli tuna:

  1. Pulse Almonds and Cauliflower in food processor
  1. Transfer the mixture to a bowl
  1. Add in the rest of the ingredients and mix
  1. Taste and make sure it's to your liking! You can adjust the seasonings if needed, you might want more Vegenaise, Dijon, Nori Flakes, etc
  1. Serve on lettuce leaves, salad or Ezekiel bread, wrap
