Shrimp Marinade and Tomatillo Horseradish Sauce

Ingredients

Ingredients for Shrimp Marinade

  • 2 TBSP lime juice
  • 2 TBSP tequila
  • Some minced garlic
  • 1lb large shrimp peeled and deveined

Tomatillo Horseradish Sauce

  • 6 tomatillos husked, washed and cut in 1/2
  • 1/2 red onion coarsely chopped
  • 2 garlic cloves chopped
  • 1 jalapeño pepper, de-seeded and chopped
  • 1 TBSP canola oil
  • Salt and pepper
  • 1 1/2 TBSP white wine vinegar
  • 1 1/2 TBSP agave
  • 1/8 c prepared horseradish drained
  • 1/4 c cilantro chopped

Instructions for Shrimp Marinade

Mix all ingredients

Marinate shrimp from 1-4hrs in the fridge

Cook shrimp on grill pan turning once for 5-7min

Instructions for Tomatillo Horseradish Sauce 

Place tomatillos, onion, garlic, and jalapeño on a sheet pan, toss with oil and season with salt and pepper

Cook until mixture is soft but do not allow it to color 15-20min

Transfer to a food processor and process until smooth

Add the vinegar, agave, horseradish, and cilantro and pulse to combine. Season with salt and pepper. 

Cover and refrigerate 1hour before serving... 

Serve the shrimp with the Tomatillo Horseradish sauce over quinoa.
