Chef Andrew Gruel of Slapfish restaurant is making a delicious seafood burger with ginger ketchup.
Ingredients

Ingredients for Burger

  • 2 each 3 oz opah filet (sliced thinly to cover the bun)
  • 1 Brioche Bun

Ingredients for Slaw (Make before serving)

  • Shredded romaine lettuce
  • Shaved Carrots (paper thin)
  • Shaved Celery (paper thin)
  • ¼ cup mayo
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • Salt and pepper to taste

Ingredients for Ginger Ketchup

  • 6 oz tomato paste
  • 1 sherry vinegar
  • 2 tablespoon pickled ginger
  • 1 teaspoon garlic powder
  • 1 tablespoon honey
  • 1 tablespoon lemonade
  • ¼ cup water
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Spice for Fish

  • 1 tablespoon paprika
  • 1 teaspoon granulated garlic
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon oregano

Opah Burger - Home & Family

TO BUILD:
Slice the Opah into thin pieces wide enough to fit across the sandwich.
Season the fish with the spice mix and sear in a hot cast iron pan.

To Build the Burger:
● Toast or grill the bread briefly. Smother on the bottom with the ketchup.
● Next place one piece of grilled opah down.
● Place a good scoop of the slaw on top of the opah.
● Top with another piece of opah and smother with the ketchup until dripping off the burger.
● Top with the bun.
