Nigiri and Nori Roll Sushi - Home & Family

Chef Eric Crowley is teaching you how to make your own sushi at home.


  • 2 C Sushi rice
  • 1 Lb Fresh fish, skinless filets
  • 1 tsp Wasabi horseradish
  • 1 tsp Rice vinegar
  • 3 T Water
  • Pickled ginger (as needed)
  • Wasabi horseradish (as needed)
  • Soy sauce (as needed)
  • Mirin (as needed)
  • 2 each Nori sheets, toasted
  • 1 each Cucumber, Japanese, julienned
  • 1 pkg Enoki mushrooms
  • 1 per roll Carrot, julienned


1. In a small bowl, mix rice vinegar & water
(This is a “hand vinegar,” to keep your fingers moist while shaping the rice)

2. Slice the fish against the grain

3. Shape the rice
Place a small dab of wasabi on the rice and lay the fish on top

4. Serve with pickled ginger, wasabi & soy sauce mixed with mirin (4 parts soy sauce to 1 part mirin)

5. Lay the Nori sheet on bamboo rolling mat

6. Layer on fish, rice & cucumber

7. Roll tightly then trim into 6-8in. disks
