Ingredients for Marinade
- 1/4 c lime juice
- 1/4 c fresh oj plus zest (approx 2 oranges)
- 1/4 c grapeseed oil
- 2 garlic cloves, peeled
- 1 t dried oregano
- 1/2 t cumin
- 1/2 t coriander
- 1/2 shallot
- 2 T Worcestershire sauce
- 1/2 t kosher salt
- 1/2 t ground pepper
Ingredients for Beans
- 1x 15 oz can refried black beans
- 1/2 cup Mexican pork chorizo
- 1 t red wine vinegar
Ingredients for Cheese Sauce
- 2T butter
- 2T flour
- 1 cup half n half
- 4 oz sharp cheddar
- 4 oz smoked cheddar
- 1x serrano chili sliced thinly
DIRECTIONS FOR MARINADE
Dice up garlic and shallots first
Put garlic and shallots in mini food processor. Add rest of ingredients. Pulse until coarsely chopped.
Cover steak with marinate; marinate 2-4 hours
Grill steak to med rare- let rest- chop into small bite size pieces
DIRECTIONS FOR BEANS
Saute chorizo until cooked, add black beans until heated,
Add vinegar and adjust seasonings
DIRECTIONS FOR CHEESE SAUCE
Stir together and heat in saucepan
ON A PLATTER
- Spread beans
- Top with 3-4C chips
- Top with grilled steak which has been finely chopped
- Add spicy cheese sauce
- Add 1 cup salsa of your choice
- Add Diced Avocado (1/2 to 1 avocado)
- Add Mexian Crema or sour cream) (1/2 cup or to taste)
- Add Cilantro (1/4 to ½ cup or to taste))
- Top with more sliced chilis ( jalpeno, serranos or habanero) to taste
Top with crumbled smoky maple chipotle bacon (recipe below)
Smoky Maple Chipotle Bacon:
Preheat oven to 350 degrees F.
Place 6 pieces of bacon on a rack over a sheet pan
Whisk 1/3 cup maple syrup and 2 T adobo sauce from can of chipotles, and 2 T melted butter
Brush mix on bacon- repeating every 15-20 min - turn bacon over each time- cook until desired crispness
