Katsuji Tanabe’s JAPSICAN recipe


  • 1/4 cup Soy Sauce
  • 1 cup Mirin
  • 1 thin sliced Jalapeno
  • 1/8 cup Yuzu
  • 1/2 cup Sugar
  • 4 Pearl onions
  • 3 thin sliced Habanero Chiles
  • 1 clove chopped Garlic
  • 10 Orange segments
  • 1 tbsp microplane - fresh wasabi
  • 1 bunch Cilantro - tops only


  1. Combine Mirin sugar, soy sauce, garlic and jalapeno
  1. Bring to a boil then reduce
  1. Add peeled onions and cook til al dente
  1. Thin slice the tuna
  1. Combine the oranges with the habanero and olive oil (season with soy sauce)
  1. Set the tuna on the plate
  1. Add the onions and some of the juice on the side
  1. Add salad on top of the tuna
  1. Finish with yuzu olive oil and fresh wasabi
