Ingredients:
- 1/4 cup Soy Sauce
- 1 cup Mirin
- 1 thin sliced Jalapeno
- 1/8 cup Yuzu
- 1/2 cup Sugar
- 4 Pearl onions
- 3 thin sliced Habanero Chiles
- 1 clove chopped Garlic
- 10 Orange segments
- 1 tbsp microplane - fresh wasabi
- 1 bunch Cilantro - tops only
Directions:
- Combine Mirin sugar, soy sauce, garlic and jalapeno
- Bring to a boil then reduce
- Add peeled onions and cook til al dente
- Thin slice the tuna
- Combine the oranges with the habanero and olive oil (season with soy sauce)
- Set the tuna on the plate
- Add the onions and some of the juice on the side
- Add salad on top of the tuna
- Finish with yuzu olive oil and fresh wasabi
