Italian Sausage and Stewed Peppers

Chef Bruce Kalman is making a delicious combination that has a mouth-watering kick!
Ingredients for Stewed Peppers
  • 2 oz oil blend
  • Small bunch tied fresh oregano
  • 1 tsp red chili flakes
  • ¼ C garlic, smashed fine
  • 2 lb cleaned and julienne red bell peppers (stems and seeds removed)
  • 1 lb yellow onion, julienne
  • 1 C dry white wine
  • 3 C canned tomato
  • To taste kosher salt and freshly ground black pepper
  • 6 each Italian sausage
  • 6 each Martin’s potato hot dog rolls
  • 6 each Martin’s potato hot dog rolls

Directions

1. In a large sauce pan, heat the oil, add the oregano, chilis and garlic and cook over medium heat for about 3-4 minutes, until the garlic is cooked through

2. Add the peppers and onions and season with salt and pepper

3. Cook for about 10-12 minutes, stirring often to avoid uneven cooking; the peppers and onions should be very soft

4. Add the white wine and reduce by ½

5. Add the tomato and stir to incorporate; cook for another10-15 minutes

6. Grill 6 Italian sausage until cooked through and the casing is crispy

7. Open the buns, brush with oil and toast on the grill

8. Place a sausage on the bun and top with stewed peppers and parmesan cheese
