Healthier Breakfast Tacos
Radio host Wells Adams is making breakfast tacos and pairing them with a homemade salsa.

Ingredients for Tacos

  • 4 pieces of bib lettuce
  • 1 avocado sliced
  • 2 eggs scrambled
  • 1 tomato sliced
  • Salt pepper and hot sauce to taste
  • Cilantro
  • Optional: Bacon, Chorizo, or Sausage

Ingredients for Easy Salsa

  • 1 can diced tomatoes with green chiles
  • 1 cloves garlic, smashed
  • ¼ cup onion, chopped
  • 1 jalapeno, deseed and membrane removed, chopped
  • Pinch of salt
  • Juice of half a lime.
  • 1/3 cup cilantro

Directions for Tacos

1. Assemble breakfast taco using bib lettuce as the “tortilla”
2. Layer scrambled eggs, avocado, tomato, salt/pepper, hot sauce
3. Garnish with cilantro

Directions for Salsa

1. Place everything into a food processor and puree to desired consistency
