Baked Brie Two Ways

DIRECTIONS:
- Preheat oven time 425 degrees.
- Sweet Jam with Walnuts Brie: With a sharp knife remove the very thin top layer of the brie rind on each wheel. Choose a size wheel to feed the crowd you are serving. Line a small baking tray or dish with parchment paper with enough room for both wheels. If you’d prefer separate baking trays, it’s a dish that’s ok as well. Place the 1st wheel of brie into the dish and sprinkle 1/2 the walnuts on top of the brie then spread the jam on top of that. Sprinkle the other half of the nuts on top, set aside.
- To Make the Chanterelle Brie: Clean and slice the chanterelles. Sauté the mushrooms in the olive oil over medium-high heat- 3-4 minutes. Add the herbs, chili flakes, and garlic. Season with salt and pepper to taste. Cook for another minute. Add the herbs and mushrooms to the top of the uncooked brie. Place both brie’s into the hot oven and set a timer for 6 minutes. I’ve found my brie always takes 7-9 minutes, but I set the timer at 6 and then keep watch to make sure it doesn’t overcook and melt out everywhere. Serve both brie’s with a variety of crackers or bread and I serve apple slices with the sweet brie.
