Ingredients for Cupcakes
- 15.5 oz can of black beans, drained and rinsed
- 1 box dark chocolate cake mix
Ingredients for Frosting
- 1 ripe avocado
- 1/8 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1⁄4 teaspoon cream of tartar
- 1 3⁄4 cups confectioners’ sugar
- Coco powder (optional)
Preheat oven 350 degrees
Directions for Cupcakes
1) Puree beans with one cup water until well blended
2) In a separate bowl , combine the cake mix with the pureed beans and mix well
3) line mini cupcakes tins with cupcake liners and spoon in batter
4) Bake 10 to 12 minutes
Directions for Frosting
1) Cut avocado in half, removing the pit
2) Combine the avocado with lemon juice, vanilla and cream of tartar using a food processor or hand mixer
3) Mix until smooth adding confectioners’ sugar
4) Top each cupcake with 1 teaspoon of frosting
*Tip: for stiffer consistency, place frosting in the refrigerator for a few hours
