Chicken-Stuffed Avocados
Debbie Matenopoulos has a great recipe that your kids will want to help out on.


  • 1 large avocado, split in half, pit removed
  • Juice of 1 lime
  • 2/3 cup of chicken, cooked and shredded
  • 1 Tbsp of unsalted butter
  • 2-3 Tbsp of chicken stock
  • 1/4 tsp coriander
  • 1/4 tsp of cumin
  • 1/4 paprika
  • 1/4 cup of corn kernals, fresh or frozen
  • 2 tsp of scallions, chopped (optional)
  • 2 tbsp of tomatoes, chopped
  • shredded cheese
  • cilantro to garnish
  • salt and pepper

Preheat oven to 400 degrees. In a medium skillet over medium heat, melt the butte and the stock. Saute the corn for 1-2 minutes then add the chicken, spices, and season. Remove from heat and mix in scallions if using. Halve the avocado and remove pit. Squeeze lime over the halves and lightly season. Top each have with the chicken mixture and sprinkle with shredded cheese, place in the oven until cheese is melted. Remove from oven and garnish with tomatoes and cilantro.
