Sophie Uliano's Gourmet Herb Salt

1 cup mixed fresh herbs
2 cups sea salt (best is course-grain flake or rock) – I prefer flake 1 pint-size mason jar.

1. Place herbs in your blender and pulse for a few seconds to break into little pieces.

2. Place salt in a large bowl and mix in herbs with your hands

3. Leave bowl in a warm spot overnight. (I like to turn off my oven after dinner, and leave them in the oven overnight). The idea is that you are drying out the herbs.

4. Mill your mason jar with salt and make pretty label.
