Cristina educates us on the Italian-American tradition of the Feast of the Seven Fishes, further explaining the significance of the number seven. Today, she focuses on just one of the fish, poached halibut. Cristina shares a simple way to prepare the fish by poaching it in a fruity extra virgin olive oil. Then, she cooks it in a tomato sauce with olives. When Cristina plates the dish, she adds fresh dill, pepper, and a drizzle of more sauce. Leftover sauce is also good to use with linguine, pizza, or to dip bread in.
