- 1 rotisserie chicken (shredded)
- 16 oz cream cheese
- 15oz cups Hatch green enchilada sauce
- 2 cups Mexican or cheese blend, plus ¼ cup for topping
1. Preheat oven to 350 degrees.
2. Mix all ingredients together in a medium bowl until well incorporated.
3. Pour into a greased 1.8 liter casserole or 8x8 baking dish.
4. Sprinkle remaining cheese on top of dip.
5. Bake for 30 minutes.
*Optional. Add jalapeño and bell pepper garnish to decorate
