Ingredients
- 3 lbs Dark meat chicken
- 1 tbsp. Worcestershire sauce
- 2 tsp. soy sauce
- 1 tbsp. Ketchup
- 2 tsp. minced garlic
- half tsp. black pepper
- 3 tbsp. of vegetable oil
- 3 tbsp. of brown sugar
- 2 cups rice
- 1 and a half cups pigeon peas
- half cup chopped onion
- half cup carrots
- half cup chopped sweet peppers
- 2 cups coconut milk
- 2 cups chicken broth
Directions
Step one:
Chop 3 lbs. of skinned, dark meat chicken
Step two:
Season the chicken with-
1 tbsp. Worcestershire sauce
2 tsp. soy sauce
1 tbsp. Ketchup
2 tsp. minced garlic
salt
half tsp. black pepper
Step three:
Brown the chicken-
Heat 3 tbsp. of vegetable oil in pot. Add 3 tbsp. of brown sugar to hot oil. Once sugar melts and froths then throw the chicken in to brown it. Takes about 5 min and chicken should have some color.
Step four:
After browning add ingredients to pot-
-2 cups of parboiled rice (mix rice with chicken for about a min first)
-1 and a half cups pigeon peas from tin
-half cup chopped onion
-half cup carrots
-half cup chopped sweet peppers
-2 cups coconut milk
-2 cups chicken broth
Step five-
Mix everything together and bring to a boil. Once it starts to boil, cover and simmer for 30min.
Step six-
It should be ready. You know it's ready when the rice is done(soft not grainy). Mix it all together, cool and serve. Add more salt if needed.
Pairs well with avocados.
