Ingredients:
- 2 cups Dried Pinto Beans
- 2 tablespoons Oil
- 1/2 each Onions, diced
- 1/2 each Carrots, diced
- 1 each Jalapeno's, diced
- 1/2 cup Smoked meat, diced
- 1 bottle Beer
- 1 14 oz. can Diced Tomato with Juice
- 4 cups Chicken Stock
- 2 Table spoons your favorite BBQ rub
- 1 teaspoon Dried Chili Flakes
- 1/2 cup BBQ Sauce
- 1/4 cup Brown sugar
- 1/4 cup Red Vinegar
- Salt & Pepper to taste
Recipe:
1. Soak beans overnight!
2. In a wide pot, sauté the onion, carrot & jalapeno until soft, add beer and reduce by 1/2.
3. Add the beans, meat, tomato, stock, rub and chili flakes. Bring to a boil then reduce to a simmer, check beans after 45 minutes. If beans begin to dry during cooking, add more water to just cover beans.
4. When beans are cooked, add BBQ Sauce, Sugar & Vinegar. Season with salt and pepper to your taste.
