Tabitha Brown Broccoli Cheddar Soup

INGREDIENTS:
  • 1 bag vegan cheddar cheese
  • ½ cup broccoli (fresh or frozen)
  • 1 cup carrot shreds
  • ½ cup chopped white onions
  • 3 cups veggie broth
  • 3 tbsp garlic powder
  • 1 tsp smoked paprika
  • A few dashes pink Himalayan sea salt
  • 1 -2 cups unsweetened cashew yogurt for thickness
  • 1/2 stick vegan butter
  • Croutons – at your discretion

INSTRUCTIONS:

  • Add broccoli to food processor and blend it up
  • Add your carrots, broccoli and a little veggie broth to the pot
  • Add your chopped onion and butter and some more veggie broth
  • Add your garlic powder (as much as you want to)
  • Add your paprika and then go ahead and stir all together while bringing it to a nice boil for about 10 minutes until it becomes nice and tender
  • While it is boiling add the full bag of vegan cheese to your pot as well as the unsweetened cashew yogurt and stir so that it is even throughout and continue to cook for another 5-7 min on medium
  • Feel free to add a little more paprika and garlic powder if you’d like because that’s your business and stir
  • Put in in a bowl and add some croutons and cilantro if you want to and enjoy
