Ingredients:
- 1 cup all purpose flour
- 1 cup bread crumbs
- 1 1/2 cups of beef suet
- 1 cup golden brown sugar
- 1 cup jumbo raisins
- 1 cup milk
- 1 tsp. baking soda
- 1 tbsp. boiling water
"My Wembley Pie is a traditional English Winter Holiday steamed pudding. The story behind this is that it's totally UN- Gorgeously Green because it contains beef suet (a.k.a., chunks of beef fat!!!!!). However, it's what my mother makes because she comes from the North of England where pigs blood sausages and beef fat are common in a variety of dishes. It's a traditional Holiday dessert, which is a take on a traditional Christmas Pudding. I hope you enjoy as much as I have growing up!" - Sophie
- Mix the dry ingredients together.
- Place baking soda in a small bowl and pour over the boiling water. When it stops fizzing, add the milk. Add the wet mixture to the dry and combine well.
- Grease a deep mixing bowl and spoon in the batter. Cover the top of the bowl with parchment paper, then a layer of foil tied off with string. Place the bowl in a steamer, and steam on a very low heat for 3 hours.
- Serve with whipped cream of rum butter (butter mixed with rum and sugar).
