Sophie Uliano's Pumpkin SoupIngredients: 2 cups of steamed fresh pumpking 1/2 a medium onion 1/2 apple peeled, cored and chopped 1/4 tsp of the following: nutmeg, cinnamon, dried sage 1/2 tsp of: ground cumin, sea salt 1/8 tsp black pepper 1/4 cup heavy cream 3 cups of veg or chicken stock 1tbsp of sunflower or grapeseed oil Directions: Fry the onion, apple and all seasonings over a medium heat until the onion is tender. Toss everything in a high speed blender and blend until completely smooth. Before serving, heat up your soup and then pour into the pumpkin shell. Decorate with a sprig of rosemary or flat parsley.
Sweet n Spicy Pumpkin SeedsIngredients: Pumpkin seeds from one pumpkin, washed and boiled for 10 minutes in salted water (2 cups water and 2 tbsp salt) 1 egg white, well beaten 1/4 cup pure cane sugar 1/4 tsp all spice 1/2 tsp sea salt 1tbsp butter 1 tbsp brown sugar Directions: Preheat the oven to 400 Degrees F Place the beaten egg white in a bowl and mix in the sugar, spice and salt. Coat the seeds well and then spread them evenly onto a baking sheet covered with greased parchment paper. Dot the butter over the top and sprinkle the brown sugar evenly over seeds. Place in the oven for 12 minutes or until crispy and brown. Note: You can always add a little more sea salt and/or brown sugar before munching.
