Ingredients
INGREDIENTS:
- 1 pizza dough (26 oz.)
- 8 oz tomato sauce
- 12 oz shredded low moisture mozzarella
- 4 oz ricotta seasoned with salt and pepper
- 4 oz basil pesto
FOR GRANDMA TOMATO SAUCE:
- 1 ½ cups tomato sauce
- 1 teaspoon salt
- 2 Tablespoons dried oregano
- ¾ teaspoon black pepper
- ¾ teaspoon fresh garlic
FOR SOFT RICOTTA:
- 1 cup ricotta
- 3 Tablespoons EVOO
- ¼ teaspoon salt
- 1 pinch black pepper
FOR BASIL PESTO:
- 1/3 cup pine nuts, toasted
- 3 cloves garlic
- 1 teaspoon salt
- 2 cups basil leaves
- ½ cup EVOO
- ½ cup grated parm
- 1 pinch black pepper
- 1 ½ Tablespoons lemon juice
DIRECTIONS:
FOR GRANDMA TOMATO SAUCE
- Combine ingredients for tomato sauce.
FOR SOFT RICOTTA
- Mix together ingredients for soft ricotta
FOR BASIL PESTO
- Combine all ingredients in a food processor and blend until smooth.
ASSEMBLY:
• Spread cheese in an even layer on top of dough
• Add dollops of tomato sauce and ricotta on top of cheese
• Bake for about 15 minutes at 500 until cheese is golden brown, rotating after 8 minutes
• Note: if oven does not go to 500F, bake at highest temperature oven reaches.
• Remove pizza from oven and add pesto
