Host of “Get a Clue” Rob Belushi's Sicilian version of pizza that will be your new favorite.
Ingredients

INGREDIENTS:

  • 1 pizza dough (26 oz.)
  • 8 oz tomato sauce
  • 12 oz shredded low moisture mozzarella
  • 4 oz ricotta seasoned with salt and pepper
  • 4 oz basil pesto

FOR GRANDMA TOMATO SAUCE:

  • 1 ½ cups tomato sauce
  • 1 teaspoon salt
  • 2 Tablespoons dried oregano
  • ¾ teaspoon black pepper
  • ¾ teaspoon fresh garlic

FOR SOFT RICOTTA:

  • 1 cup ricotta
  • 3 Tablespoons EVOO
  • ¼ teaspoon salt
  • 1 pinch black pepper

FOR BASIL PESTO:

  • 1/3 cup pine nuts, toasted
  • 3 cloves garlic
  • 1 teaspoon salt
  • 2 cups basil leaves
  • ½ cup EVOO
  • ½ cup grated parm
  • 1 pinch black pepper
  • 1 ½ Tablespoons lemon juice

DIRECTIONS:

FOR GRANDMA TOMATO SAUCE

  • Combine ingredients for tomato sauce.

FOR SOFT RICOTTA

  • Mix together ingredients for soft ricotta

FOR BASIL PESTO

  • Combine all ingredients in a food processor and blend until smooth.

ASSEMBLY:

• Spread cheese in an even layer on top of dough

• Add dollops of tomato sauce and ricotta on top of cheese

• Bake for about 15 minutes at 500 until cheese is golden brown, rotating after 8 minutes

• Note: if oven does not go to 500F, bake at highest temperature oven reaches.

• Remove pizza from oven and add pesto
