Richard Simmons - Kiss the Fish


  • 4 3 oz filets of tilapia or sea bass
  • 3 carrots julienne
  • 3 zucchini julienne
  • 1 1/2 cup cherry tomatoes cut in half
  • 8 basil leaves chopped
  • 3/4 cup vegetable broth
  • The juice of one lemon

- Saute fish fillets in olive oil cooking spray on both sides
- Remove from pan - Add vegetable broth to the pan and the carrots zucchini and tomatoes - Simmer until tomatoes break down and the sauce thickens - Place fish on top of the vegetables. - Sprinkle basil on top of the fish - Put the top on and steam for 5 minutes until the fish is totally cooked Dish out some vegetables put the fish filet on top and squeeze with a little lemon juice.
