Ingredients for Chicken and Brine
- 72 0.5 oz pieces chicken breast
- 1 quart buttermilk
- 1.5 oz. salt
- 1/4 bunch thyme
- 1 sprig rosemary
Ingredients for Dredge
- .75 oz. lemon, zest only
- 1.5 pounds AP flour
- 1TBSP salt
- 1/2 TBSP black pepper
- 1/2 tsp cayenne
- Fry Oil (as needed)
Ingredients for Srirarcha Mayo (Sauce)
- 1 oz sriracha
- 2 cups mayonnaise
- Mix together
- Other sauce: Simbal Sauce (From grocery store)
Ingredients for Classic Daddy Fries
- 3# Fries (skin on preferably), frozen (or 4# fresh, cut into ¼” thick and 4” long)
- 1 gallon Canola oil (or enough to fill up your electric deep fryer)
Ingredients for Sour Cream Sauce (Dipping sauce for fries)
- 8 oz sour cream
- tsp. snipped chives
- tsp. salt
- Mix all together in a bowl
DIRECTIONS FOR MARINADE
1. Cut chicken into approximately 0.5 oz. pieces, or 1” X 1”.
2. Combine buttermilk, salt, rosemary, and thyme together in large Tupperware like container.
3. Add cut chicken into buttermilk marinade, mix really well to incorporate the salt, and let sit overnight to brine for 1-24 hours.
DIRECTIONS FOR DREDGE
1. Combine all ingredients.
METHOD
1 Ensure fryers are set to 350 degrees.
2 Add some dredge to chicken in an entire container and coat until sticky.
3. Make sure your dredge has nice big flakes in it by adding in some of the brine.
4. Pack chicken again in the dredge and coat very well.
5. Chicken must be double battered.
6. Drop into the deep fryer and cook for about 5 minutes or until golden brown and reads 165 degrees internal temperature in the fattest part of the meat. Careful not to overcook the meat.
7. If thermometer reads below 160 degrees, place probe into hot oil to sanitize. Wipe the probe with your towel. Submerge probe into ice water until it reads 32-35 degrees. This will sanitize and quickly re-callibrate your thermometer.
8. Once chicken reads 165 degrees, remove from basket and cool on frying rack. Season with salt right out of fryer, if needed. It should not need salt.
Special Equipment: Electric tabletop deep fryer.
DIRECTIONS FOR FRIES
1. Preheat fryer to 375 degrees.
2. Drop fries into fryer (it’s ok if they are frozen).
3. Fry until golden, about 5 minutes.
4. Place on a rack to drain excess oil.
5. Salt well.
6. Serve on a heaping platter with sauces on the side!
