Miso Glazed Salmon Slider Bites

Ingredients:

• ⅛ cup packed brown sugar • 2 tablespoons low-sodium organic soy sauce or coconut amines • 2 tablespoons warm water • 2 tablespoons organic miso (soybean paste) • 1 tablespoon sesame oil • 1 lb sustainable salmon fillets (about 1 inch thick); cut into 1 inch cubes & seasoned with S&P • 1 tablespoon finely chopped chives • 12 mini brioche or pretzel buns
Recipe:

1. Preheat broiler.
2. Whisk first 4 ingredients in a small bowl.
3. Gently toss salmon cubes in the miso mixture.
4. Arrange fish in a shallow baking dish coated with sesame oil.
5. Broil 6-8 minutes or until fish flakes easily when tested with a fork, basting twice with miso mixture.
6. Remove from oven and assemble sliders.

Garnish Options:

Ingredients: • Pickled Ginger • Pea Tendrils • Heirloom Radish • Wasabi Paste • Avocado • Decorative Skewers
Recipe:

1. Layer slider starting with wasabi paste on the bottom half of bun.
2. Stack the rest of your favorites and finish with the top half of bun.
3. Secure with a decorate skewer.

Sustainable Shrimp Cocktail & Gazpacho Shooter

Gazpacho Ingredients: • ½ cup chopped red onions • ½ cup chopped green and red bell pepper, stemmed and seeded • 1 jalapeno pepper, stemmed and seeded • ½ cup chopped English cucumber • ½ cup chopped tomatoes • 1 teaspoon chopped garlic • ⅛ teaspoon cayenne • ⅛ cup tomato paste • 1 tablespoon white wine vinegar • 1 tablespoon balsamic vinegar • ¼ cup evoo • 2 teaspoons fresh lemon juice • 1 ½ cups tomato juice • 3 Sprigs of thyme • S&P to taste Grilled Shrimp Ingredients:
• 12 Jumbo Tail-On Sustainable Shrimp
• ¼ teaspoon cayenne • S&P
Recipe:

1. Toss ingredients in a small bowl.
2. Grill or roast in in 375 F oven until just firm; about 7-10 minutes.

Garnish Ingredients:
• Julienne of Celery Straw
• Persian Cucumber Wheel Recipe:

1. Fill tall cordial or martini glasses ¾ full.
2. Add shrimp and Persian cucumber wheel to rim and place celery straw in glass.
