La Mezcalita
- 1 1⁄4 oz. Tequila Repo
- 3⁄4 oz. Mezcal
- 1 oz . Pineapple puree
- 3 lime wedges
- 1⁄2 oz. Agave Syrup
- 2 Pinches of Cilantro
- 1 Jalapeno Slice
French Diva Cocktail
- 1 1⁄2 oz. White Whisky
- 1⁄2 oz. St. Germain
- 3⁄4 oz. crème de Violette
- 3 lime wedges
- 1⁄2 oz. Simple Syrup
DIRECTIONS:
La Mezcalita Cocktail:
In a mixing glass gently muddle the jalapeno and cilantro with lime and Agave Syrup, then add all remaining ingredients. Shake and pour into a rocks glass with Cold Draft ice in a Smoked salt rim.

- Agave Syrup

- Canned Pineapple chunks
- Smoke Salt
- Cilantro
- Jalapeno
The French Diva:
PREP:
- Muddle lime and simple syrup.
- Place all the ingredients into a shaker with ice. Shake vigorously. Strain into a coupette and finish with Chamomile Foam.
- Garnish with a fresh Violet.
GARNISH:
- St. Germain egg foam Fresh Violet.
PREP:
- Chamomile foam
- 800ml Water
- 3 Gelatin sheets
- 1 oz. Chamomile powder
- 1 tsp vanilla extract
- 2 1⁄2 oz. Gomme syrup
- 15gr powdered egg white
ADD TO LIQUOR INVENTORY:
- Crème de Violettes
- Candied Violettes

- Fresh Violettes
