Ingredients

Ingredients for the Honey-Fig Sauce

  • 1⁄3 cup beer

  • 1⁄3 cup honey

  • 4 or 5 large dried figs

Ingredients for Chicken

  • 1pound chicken wings, cut into winglets, wing tips discarded
  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 1 teaspoon cracked black pepper
  • 1⁄2 teaspoon minced garlic
  • 1 teaspoon finely chopped fresh parsley

Preheat the oven to 400oF. Line a baking sheet with parchment paper.

Make the sauce: Combine the beer, honey, and figs in a small, heavy saucepan. Stir over low heat until the honey dissolves. Increase the heat to medium and simmer until the figs are tender, 5 to 7 minutes.

Remove the sauce from the heat, let cool, and transfer to a blender. Blend the sauce until smooth.

Return the sauce to the pot and heat over medium-high heat, stirring frequently, until thickened, 20 to 25 minutes.

Make the chicken: In a large bowl, combine the chicken wings, 2 tablespoons of the honey-fig sauce, the olive oil, lemon zest, pepper, and garlic. Toss well to coat.

Place the wings on the lined baking sheet and bake for 40 to 45 minutes, or until the skin is crispy and caramelized with sauce. Pour the remaining sauce over the wings and garnish with the parsley before serving. Keep in mind that you can always serve the sauce on the side or add it to the chicken wings for a flavor explosion.
