Ingredients for Chia Seed Dressing
- 1 cup good olive oil
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 tsp chia seeds
Ingredients for Melon and Mint Salad with Avocado Cream
- Watermelon
- Honeydew
- Cantaloupe
- Top with 2 tsp fresh lemon juice and a handful of chopped fresh mint
- Add the avocado cream to the bottom of the jar, and layer in the melon balls color by color.
Ingredients for Avocado Cream
- 1 ripe avocado mashed
- ½ cup cashew cream (1/2 cup of cashews soaked overnight, then blended with ¾ cup of water.
- ½ tsp vanilla extract
- 1 tsp maple syrup
At the bottom you have the dressing (unless you are making ahead)

Hard veggies
radish, jicama, carrot, beets, celery
Soft veggies
cherry tomato, cucumber, olives, bell peppers, mushroom slices

Brown rice, quinoa
(Or Bulgar wheat )

Cubed baked tofu, brown beans such as black, pinto or edamame
Greens
Baby kale, baby spinach, arugula, etc
Toppings
Croutons, seeds and nuts
