Ingredients 12 King prawns / shrimps raw and no shell on. (you can buy cooked if you prefer) 4 small soft flour tortillas ½ cup white cabbage finely sliced ½ lime ¼ cup chopped peanuts 1 tbsp fresh mint 2 tbsp fresh cilantro 2 tsp fresh ginger ½ cup beansprouts 1 fresh red chili 2 - 3 tbsp hoisin plum sauce Method: This is a super easy and healthy recipe to rustle up when you’re in a rush. Start by preparing all your ingredients! Finely slice the cabbage, roughly chop the herbs. Finely chop the ginger and chili. You can use pre cooked king prawns for this, but if you want a tastier prawn I like to buy them fresh and raw, take all the shell off and butterfly them – slice the prawn through the middle length way’s until you get to the tail and stop there so it is still in one piece. Pop the prawns in a small bowl, add the ginger, chili, 1 tbsp hoisin sauce. Heat a little oil in a skillet, when hot add the prawns and cook for 2 – 3 minutes until cooked through. Using another pan heat your tortillas, just lay them in the dry skillet and turn so they become lovely and soft. Start to assemble your taco, add a tsp of hoisin sauce, sprinkle of cabbage, beansprouts, cilantro, mint, peanuts, top with the cooked prawns. Finish with a squeeze of lime and roll up and eat! YUM!
