Home Cook contest semi-finalist Kelley Wolf is baking some of her famous lemon bars with homemade crust.
Ingredients for Crust
- 2 C sifted flour
- 1/2 C sifted powdered sugar
- 1 C butter, softened
Ingredients for Lemon Filling
- 4 eggs, beaten
- 2 C Sugar
- 1/3 C freshly squeezed lemon juice (preferably Meyer lemons)
- 1/4 C sifted flour
- 1/2 tsp baking powder

1) Sift flour and powdered sugar together. Cut in butter until mixture comes together in a sandy texture. Press into a greased 9x13x2 inch pan. Bake at 350 for 25-30 minutes or until lightly browned.
2) Combine eggs, sugar and lemon juice; beat well. Sift together flour and BP; STIR into egg mixture. Pour over baked crust, bake at 350 for 25-30 minutes, cool. Sprinkle with powdered sugar and cut into bars.
