Jackie Collins Cocktail
In A Cocktail Shaker
- Muddle 6 Raspberries & Splash Syrup
- Add 2 Oz Vodka
- Squeeze ½ Lime Over Vodka Mixture
- Add Ice Cubes
- Shake 30 Sec
- Pour 1.5 Oz Club Soda
- Shake Once
- Strain Into Hi-Ball Glass
- Garnish with Rash & Fresh Mint
Zucchini Boats
Boil 3 Zucchini for 15 Min, Drain, Set To Cool Melt 3 T. Butter Add 1 Chopped Onion Sweat 5 Min Add:
- 1 Cup Rice
- 2 Tsps Coriander
- 1 Tsp Cumin
Stir Until Coated With Butter
Pour In:
- 2 Cups Chicken Stock
- 2-3 Cooked Chorizo Sausages
- Bring To Boil
- Simmer For 13 Min
Stir In:
- 1 Cup Tomato Sauce
- 1 Cup Parmiagiano-Reggiano Cheese
- Set Aside To Cool
Cut In Half – Zucchini:
- Scoop Out Seeds, Toss
- Scoop Out Flesh, Save Half
- Sprinkle Shells with Kosher Salt
- Drain For 10 Min
- Chop Flesh
- Add To Cooled Rice Mixture
- Season with Salt, Pepper, and Grated Cheese
- Fill Zucchini Shells With Rice Mixture
- Sprinkle with 1 Cup Grated Monterey Jack
- Press Sliced Cherry Tomatoes
- Put In Broiler for 1-2 Min.
