Ingredients
- Persian cucumbers
- Fresh dill
- Fresh garlic clove
- Dried Dill Seed
- Fresh Jalapeno
- Pickling Spice
Directions
The cold bath is a ratio of 1 to 1 to 1. (Maybe times four for two big Mason Jars)
- One Cup Apple Cider Vinegar
- One Cup water
- One Tablespoon Kosher Salt
Bring cold bath to a boil, turn off.
Slice into quarters or halves 12-15 Persian cucumbers In a clean Mason Jar, put in...
1-1/2 cloves of garlic (sliced or chopped, I prefer sliced)
5 shakes of a Dried Dill Seed. (About 2 Tb)
A one inch slice of fresh Jalapeno cut in half
2-3 tbsp of pickling spice (see below)
Stuff cubes into jar accompanied by lots of sprigs of fresh dill. Couple more shakes of Dried Dill Seed.
A topping off with more pickling spice.
Pour the cold (now hot) bath over the cucumbers.
Seal the lid, wipe the jar down and stuff in the back of the fridge for 3 weeks.
Discover three weeks from now and smile.
Pickling Spice: Any type pickling spice you like will work(in a pinch, I like Morton & Bassett's Pickling Spice from San Francisco). However, if you have the time and inclination, buying and mixing the following always brings a one-of-kind quality to each batch. (I'm heavy on the All-Spice, Turmeric & Cinnamon)
