Grilled Spicy Lime Chicken Skewers with Grilled Veggies
Actress/Dancer Sabrina Bryan is making a chicken dish with some added zest that serves 4.
INGREDIENTS:

CHICKEN:

  • 1 Tbsp. lime zest
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup Sriracha sauce + extra to serve
  • 1 Tbsp. olive oil + extra to brush
  • salt and pepper to taste
  • 2 lbs. skinless, boneless chicken though, cut into 1 1/2 inch chunks
  • 1/2 cup of thick greek yogurt
  • cilantro leaves and lime wedges for garnish

VEGGIE:

  • 1/2 lb. of asparagus, trimmer
  • 3 carrots, cut lengthwise in half
  • 1 yellow squash, cut into angled 1/2-inch slices
  • 1 zucchini, cut into angled 1/2-inch slices
  • olive oil to coat (approx. 2 Tbsp.)
  • salt and pepper to taste

Directions

  1. Place the lime zest, lime juice, sriracha, oil and salt & pepper in large bowl and mix to combine. Reserve 2 Tbsp for later.
  2. Place chicken and sauce in zip lock bag and smoosh together. Put in fridge to marinate for 15 minutes at least.
  3. Preheat grill (or grill pan on stove) and thread the chicken onto metal skewers. brush the chicken with the extra oil and place on grill or in pan. Cook for 4-5 minutes until cooked through. Place on a plate and tent aluminum foil over chicken and let rest.
  4. Place veggies in a large bowl, and add olive oil, salt and pepper. Toss the veggies to coat and let sit for 10-15 minutes.
  5. Place the veggies in a grill basket (on grill) or place directly on the grill pan (on stove) until cooked through. Remove and place on a plate. Lay skewers on top.
  6. Place reserved marinade and greek yogurt in small bowl and stir to combine. Use sauce for dipping chicken and veggies.
