Ingredients for the Cake:
- 6 Cups sliced fresh strawberries
- ½ Cups sugar
- 1 tsp vanilla extract
- 3 Cups all purpose flour
- 5 Tablespoons sugar (divided)
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ Cup cold butter, cubed
- 1 Cup buttermilk
- 2 Tablespoons heavy whipping cream
Ingredients for the Topping:
- 1 ½ Cup heavy whipping cream
- 2 Tablespoons sugar
- ½ teaspoon vanilla extract
INSTRUCTIONS:
1. Combine strawberries with sugar and vanilla
2. Mash slightly
3. Let stand at least 30 minutes (tossing occasionally)
4. Preheat oven to 400
5. Wisk together flour, 4T sugar, baking powder, baking soda and salt
6. Cut in butter until crumbly
7. Add buttermilk; stir until just combined
8. Drop batter by 1/3 cupfuls 2in apart onto baking sheet
9. Brush with 2T heavy cream
10. Sprinkle with remaining 1T sugar
11. Bake 18-20 minutes
12. Remove to wire racks to cool completely
13. For topping: beat heavy cream until it begins to thicken
14. Add sugar and vanilla
15. Beat until soft peaks form
16. To serve, cut biscuits in half; top with strawberries and whipped cream
