Ingredients
Fish:
- 1 ½ Pounds of Cod cut into pieces
Ingredients for the wet mixture:
- 1/3 Cup Mayonnaise
- 1/4 Cup Crème Fraiche
- 1 Tbsp Chopped Shallot
- 2 Tbsp Chopped Cornichons
- 2 Tsp Chopped Capers
- 2 ½ Tsp Dijon
- ½ Tsp Old Bay
- 1 ½ Tsp Champagne Vinegar
- 2 Tsp Lemon Juice
- Salt To Taste
- 1 Tsp Parsley Chopped Fine
- 1 Tsp Chives Chopped Fine
- ½ Tsp Dill Chopped Fine
Ingredients for the batter:
- ½ Cup Wondra Flour
- 2 oz Pilsner Beer
- 1/2 oz Vodka
- 1 Tbsp Dijon
- ½ Tsp Baking Powder
- 2 oz Soda Water
- ½ Egg Whisked
- 1 ½ Tbsp Dill
- 1 ½ Tbsp Parsley
- 1 ½ Tbsp Chives
Ingredients for french fries:
- 3 Large Russet Potatoes
Directions for the fish and wet mixture:
- Mix all ingredients (except fish) and let marry for three hours
- Dredge fish in Wondra flour/batter mixture
- Dip pieces into wet mixture
- Fry for 3-5 minutes at 350 degrees. Serve immediately.
Directions for french fries:
- Cut 3 large russet potatoes into ¾ in strips and blanch in well salted water until almost cooked through.
- Remove from water and allow to cool.
- Then fry at 280 degrees for 8 minutes until pal in color and holding their shape well.
- To finish fry at 330 degrees for 3 minutes.
