1. Put 1/2 in of coconut oil in a cast iron skillet and heat until hot. (you can put more oil in to make the pieces cook faster)
2. Cut the catfish fillet into cubes. 3. Combine 2 cups of corn mill, 1/2 cup of coconut shavings, a little salt and pepper into a bowl. 4. Beat 3 eggs and ¼ cup of milk or whipping cream in a bowl. 5. Dip catfish cubes in egg mixture. 6. Roll in corn mill and coconut mixture. 7. Fry for about 2 minutes.
